..., We think that although pleasure is an essential part of the game, food has to meet certain requirements in order to keep our body in perfect balance.

In order to reach these objectives, we promote:

  • Perfectly fresh products, organic and local
  • Steamed and braised cooking
  • Whole food and ingredients
  • Balance between the 5 savours
  • Nutritional balance
  • Soaking and/or germination of Cereals and leguminous plants
  • Oils of the first pressing
  • Aromatic fresh herbs and spices
  • Plant Milks and Creams

Our Growers are our Neighbors...

Most of them have their farms in a 20 km circle.
We know them and their work, we visit them; they have organic quality-label or they use natural farming methods.
With Cathy and Jeannick, our main growers, we also favour forgotten vegetables and promote old varieties of every kind of vegetable (tomatoes, potatoes, pumpkins...).
These exceptional vegetables are the heart of the Creative and Savoury Vegetarian Cooking at Mas Novis.

Our local (from the Terroir) products

In addition to the vegetables:
- The "Pélardon" (special goat cheese from the Cévennes, thanks to Claudie and Annabelle !) and other ewe and cow cheese (all organic), that we offer in cheeseboard or within savoury recipes...
- The Sweet Chesnut (the "bread" of the ancient people here in the Cévennes), that we collect from our trees (or buy to our neighbours) and that we use in salted or sweet recipes...

... and also:
- Bread made with true leaven from le Fournil des Bergers bleus
- Rice from Camargue and other french cereals,
- Honey from Mount Aigoual or Lozère.
- The Wines from Puechcamp, our neighbour, Domaine Beauthorey (Pic Saint Loup), Mas de La Salle ("vin de pays des Cévennes"), Domaine Cabanis (Costière de Nîmes) and Domaine des Coccinelles (Côtes du Rhône).
- ....

All this stuff for an original, balanced, perfectly fresh, savoury and coloured Cookery at Mas Novis...

We receive you at our Table d'Hôtes

  • Each morning for Breakfast
  • On Saturdays, Mondays, Wenesdays and Fridays for the dinner
  • On Sunday morning (in July and August), for the brunch

During the low season, we may serve evening meals on demand, on the other nigths.
